Chilaquiles Verdes

A delicious breakfast with green salsa, crunchy fried triangular tortilla chips, avocado, onions, sour cream, cheese, and your preferable eggs; fried or boiled.

Ingridients

A pack of corn tortillas, 1 lb of Green Onions, Shredded cheese, 1/2 Onion cut into julienne, 1 clove of garlic, 2 sprigs epazote, 2 jalapenos, Chicken broth, Avocado, 8 eggs boiled or fried.

Procedure

  1. Boil green tomatoes and jalapeno
  2. Blend it with garlic and fry the salsa in a saucepan with a tablespoon of oil, add chicken broth and salt
  3. Leave on for 15 minutes in low heat, at the end add the epazote and cover with a lid
  4. For the frying tortillas, cut up tortillas in triangles, put them in a frying pan until they are crispy, take them out and drain them
  5. After a few minutes put tortillas into the salsa.

Preparation

In a plate, serve the chilaquiles, add the shredded cheese, avocado, minced onion, and the eggs. Buen Provechito!
