Enchiladas Verdes

Description

A classic mexican dish of bathed tacos in green salsa with chicken inside and topped with lettuce, onions, cheese and sour cream.

Ingridients

Green tomato, jalapeño or green serrano chili, garlic, onion, fresh cheese, sour cream, lettuce. (Julienne slice), radishes (if you want) in wheels (cut them), corn tortillas, 5 sprigs of Epazote, boiled 4 chicken breast

Procedure

  1. Boil chicken breast with pepper, onion, garlic, and salt. When it is cooked takes out and drain it
  2. In a pot bring the tomatoes to a boil, do not boil the tomatoes too much because otherwise the sauce becomes bitter, neither too boiled nor too green
  3. Add 2 jalapeno peppers and garlic after it begins boiling. Blend all of it to make the green salsa
  4. In a saucepan sauté onion and then the salsa, leave it for 10 minutes when the sauce has gone down a little bit, add water (A cup and ½ or chicken broth.) Add salt
  5. Then let it boil again for 15 minutes over medium heat. At the end add epazote
  6. After In a frying pan with a little oil heat the tortillas, but do not make them crispy they have to be soft

Preparation

In a plate put the tortillas and put the salsa over it add the shredded chicken, add more salsa and wrap it like taco and put more sauce over it. Then on top add the lettuce, shredded cheese, sliced onion, sour cream cream and sliced avocado and ready to eat.
