Huevos Rancheros

Huevos Rancheros
A classic mexican breakfast that has eggs, salsa, avocado, and onions over tostadas with refried beans.
Ingridients
-8 Eggs, 2 cans of whole black or pinto beans from your local Mexican store, 8 Corn Tortillas, 6 Tomatoes, 5 sprigs cilantro, -1/4 cut onions into julienne strips, half for the salsa, half for the refired beans, 2 jalapeños, shredded cheese, 2 avocadoes, 1 garlic clove, salt
Procedure
- Put tomatoes, jalapeños and garlic in a pan to roast
- After the tomatoes, jalapeños and garlic are roasted, put them in a blended with 5 sprigs cilantro and salt
- After it is well blended, in a saucepan, add a teaspoon of oil and the cut onions into julienne strips
- Add oil in a saucepan, add the onions and after the onions are sautéed add the salsa
- After 15 minutes in low heat, it will be ready
- Drain the beans... then blend them
- On a pan, add a teaspoon of oil, onions into julienne strips and when the onions are sautéed. Add the beans
- Add about ½ of water so its not too thick
- After about 10 minutes in low heat, it will be ready, the consistency must be thick
- In a frying pan, add enough oil to fry, when its hot, fry one by on
- Take out carefully and put on a paper towel to absorb the oil
- After you fry all your tortillas, fry eggs to your liking

Preperation
In a plate, spread refried beans in two fried tortillas, put an egg in each tortilla. Next bathe your tortillas in salsa, add chopped cilantro, minced onions, shredded cheese, and avocado.
