Huevos Rancheros

A classic mexican breakfast that has eggs, salsa, avocado, and onions over tostadas with refried beans.

Ingridients

-8 Eggs, 2 cans of whole black or pinto beans from your local Mexican store, 8 Corn Tortillas, 6 Tomatoes, 5 sprigs cilantro, -1/4 cut onions into julienne strips, half for the salsa, half for the refired beans, 2 jalapeños, shredded cheese, 2 avocadoes, 1 garlic clove, salt

Procedure

    Make the salsa

  1. Put tomatoes, jalapeños and garlic in a pan to roast
  2. After the tomatoes, jalapeños and garlic are roasted, put them in a blended with 5 sprigs cilantro and salt
  3. After it is well blended, in a saucepan, add a teaspoon of oil and the cut onions into julienne strips
  4. Add oil in a saucepan, add the onions and after the onions are sautéed add the salsa
  5. After 15 minutes in low heat, it will be ready
  6. Make the refried beans

  7. Drain the beans... then blend them
  8. On a pan, add a teaspoon of oil, onions into julienne strips and when the onions are sautéed. Add the beans
  9. Add about ½ of water so its not too thick
  10. After about 10 minutes in low heat, it will be ready, the consistency must be thick
  11. Make fry-tortillas and eggs

  12. In a frying pan, add enough oil to fry, when its hot, fry one by on
  13. Take out carefully and put on a paper towel to absorb the oil
  14. After you fry all your tortillas, fry eggs to your liking

Preperation

In a plate, spread refried beans in two fried tortillas, put an egg in each tortilla. Next bathe your tortillas in salsa, add chopped cilantro, minced onions, shredded cheese, and avocado.
