Pambazos

Description
A bathed sandwich in red salsa that includes potatoes, chorizo, cheese, lettuce and topped with green salsa.
Ingridients
4 bread rolls, jalapeno chorizo roughly chopped, 6 potatoes boiled and peeled and cut into small squares, sour cream, prepared green Mexican salsa, red salsa (4 tomatoes, 5 dry guajillo chiles, 1 clove garlic), 1 garlic clove, 1 onion cut into julienne, lettuce thinly chopped, shredded mozzarella cheese.
Procedure
- To make the red salsa, boil the ingredients to make the red salsa, blend it all together
- In a saucepan, add a tablespoon of oil, add some onion cut into julienne, strain the salsa and add it to the saucepan
- Leave 10 minutes in low heat. In another saucepan, add the chorizo and fry until its releases grease (sautéed)
- Add the onion cut into julienne and the potatoes, sauté for 5 minutes
Preparation
In a preheated skillet, add a teaspoon of oil. Cut open the bread. Dip the bread into the red salsa and put it immediately in the skillet with oil. Turn it so both sides are a little crispy and add the potatoes with chorizo and the shredded mozzarella cheese. (sandwich style). Put it in your plate and add the lettuce, green salsa and sour cream. Ready to eat!
