Ingredients:

1) 2 cups of all purpose flour.

2) one teaspoon of baing soda.

3) 4 table spoons of cold water

.4) 2 cups of oil.

preparation:

mix the baking soda, a teaspoon of slat and flour. pour water on the flour. mix everything with your hands on a slighthy floured surface untileverything is well mixed, dont knead the dough( add some flour if it is too sticky) let dough rest for ten minutes covered in plastic film.extended until its very thin, cut in circles and punch holes in it with a fork.fry in abundant oil until it turns golden brown. sprinkle salt and leave in a paper towel for a few seconds before servin and serve hot.

 

salcocho ( meat harty stew))

Ingredients:

preparation:

place the meat and sesoned it .in a iron pot heat the oil add the meat and stir,cover and simmer for ten minutes.add a few spoons of water if the meat gets sticks to the pot, add the rest of the meat to the pot and just do the same as you did to the first one. add 1/4 of water and bring to a boil. add the vegtebles that yuo previouly cut. let simmer for like about 15 minutes add al remaining ingredients and just add water when its needed.stir regularly to avoid excessive sticking. let simmer until the last ingredients you added are tender. let simmer until the stew is thick. enjoy and serve while hot with white rice.

Mofongo ( mashed plantains)

Ingredients:

1 lb pork/ chicken/ cheese etc any meat you like

1 cup of oil

2 1/2 tea spoon of salt

4 unripe plantains

4 cups of prepear beef stuck

2 tablesopoons of mashed garlic( if you like)

preparation:

in a deep frying pan heat the oil and fry the plantains, garlic and meats together. using the woodan mortar mash the plantains together with the garlic nd meat. serve with the beef or any meat stock.

locrio de pica pica ( rice and spicy sardines)

ingredients:

5 cans of sardine in hot tomato sauce

3 cups of rice

5 cups of water

5 tablespoons olive oils

1/4 cut red peppers, cut into small cubes

1 teaspoon mashed garlic

1/4 celery stalks, cut into slices

salt

In an iron pot heat the oil add the herbs, spices,peppers, garlic and salt. fry for about 2 minutes add sardine and mixe it well.stir to advoid sticking. when the liquid has evaporated simmer at a very low heat. wait 15 minutes uncover stir wait another 5 minutes stir, try the rice it should be firm but tender inside.
