Ackee and saltfish is Jamaica's national dish.

1 Can of ackee, drained
1/2 lb boneless salt cod
3 tablespoons oil
2 onions, sliced
1/4 teaspoon dried thyme
1/4 scotch bonnet pepper skin finely chopped up
1 small tomato, chopped
3/4 teaspoon tomato paste
1/2 sweet pepper chopped
1/8 teaspoon black pepper

CURRY SHRIMP RECIPE

2 lbs fresh shrimps
1.25 fl oz oil
2 onions, chopped
1/4 shin of a scotch bonnet pepper finely chopped up
2 cloves garlic, chopped
2 tablespoons curry powder
1 tomato, chopped
1/2 sweet pepper chopped
1/4 teaspoon salt
black pepper
1 1/2 cups water

Fried Plantain  

  • Slice the plantains into 2 in the middle (width not length - like breaking a banana in 2).
  • Cut up both pieces of plantains into 1/4 inch slices longways.
  • Heat skillet filled with just enough oil to cover the 1/4 inch slices.
  • Fry plantain slices until golden brown on each side.
  • Each slice needs about 45 seconds to a minute to cook.
  • Be careful not to burn.
  • Place cooked plantain in a dish layered with napkins so as to drain/soak up the oil.Sprinkle with cinnamon or nutmeg to taste.

Pineapple Upside-Down Cake

1/4 cup butter or margarine ~ 2/3cup packed brown sugar ~ 9 slices pineapple in juice (from 14-oz can), drained ~9 maraschino cherries without stems, if desired ~ 1 1/3cups Gold Medal all-purpose flour ~ 1cup granulated sugar ~ 1/3cup shortening ~ 1 1/2teaspoons baking powder ~ 1/2teaspoon salt ~ 3/4cup milk ~ 1 egg

Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice. In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered. High Altitude (3500-6500 ft): Increase flour to 1 1/2 cups and baking powder to 1 teaspoon. Bake 50 to 55 minutes.

SIMPLE JAMAICAN RUM PUNCH RECIPE


INGREDIENTS:

4 Cups water
1 Cup lime or lemon juice
3 cups strawberry-flavored syrup
2 cups Jamaican white rum

JAMAICAN SORREL RECIPE
Ingredients: dried sorrel, dried ginger, sugar, allspice

Recipe:
1/8 tea spoon ground allspice (pimento) or about 12 whole allspice (optional)
6 oz dried sorrel
2 rounded table spoon dry ginger
8 cups water
2.5 cups water for re-draft
1.5 cups white sugar
