Ingredients

  • 1 cup orange juice
  • 1 cup cold milk (evaporated or whole)
  • 2–3 tbsp sugar
  • Ice cubes

Process

  1. Chill the milk very well.
  2. In a glass, dissolve sugar in orange juice.
  3. Add ice, then slowly pour in the cold milk while stirring.
  4. Serve immediately while cold and frothy.
   
Batida de lechosa

Batida de Lechosa

Ingredients

  • 1 cup ripe papaya (lechosa) cubes
  • 1 cup cold milk
  • 2–3 tbsp sugar or honey
  • ½ tsp vanilla (optional)
  • Ice cubes

Process

  1. Add papaya, milk, sugar, vanilla, and ice to a blender.
  2. Blend until very smooth and creamy.
  3. Taste and adjust sweetness if needed.
  4. Serve cold in a tall glass.
   
Jugo de Chinola

Jugo de Chinola

Ingredients

  • 6–8 passion fruits (chinola)
  • 4 cups cold water
  • ¼–½ cup sugar (to taste)
  • Ice cubes

Process

  1. Cut the passion fruits in half and scoop the pulp into a blender.
  2. Add half of the water and pulse a few times to loosen the seeds.
  3. Strain the mixture through a fine strainer into a pitcher.
  4. Add the rest of the water and sugar, then stir well.
  5. Serve over ice and enjoy cold.
   
Ponche Crema

Ingredients

  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 3 egg yolks
  • 1 tsp vanilla extract
  • ½ tsp ground nutmeg or cinnamon
  • ½–1 cup rum (optional, to taste)

Process

  1. In a saucepan, whisk together evaporated milk, condensed milk, and egg yolks.
  2. Cook on low heat, stirring constantly, until it slightly thickens (do not boil).
  3. Remove from heat and let cool a bit.
  4. Stir in vanilla, spices, and rum if using.
  5. Chill in the refrigerator and serve cold in small glasses.
   
Batida de Mamey (Zapote)

Batida de Mamey (Zapote)

Ingredients

  • 1 cup ripe mamey (zapote) pulp
  • 1–1½ cups cold milk
  • 2–4 tbsp sugar, to taste
  • ½ tsp vanilla (optional)
  • Ice cubes

Process

  1. Add mamey pulp, milk, sugar, vanilla, and ice to a blender.
  2. Blend until thick and smooth.
  3. Adjust sweetness or milk if you want it lighter or thicker.
  4. Serve immediately while cold.
   
Café Dominicano

Café Dominicano

Ingredients

  • 2 tbsp finely ground coffee (for espresso/greca)
  • 1 cup water
  • Sugar to taste

Process

  1. Fill the bottom of a greca (stovetop espresso maker) with water.
  2. Add coffee to the filter basket and level it (do not press too hard).
  3. As it brews, mix a little of the first coffee drops with sugar in a cup to make a thick crema.
  4. Pour the rest of the coffee over the crema and stir.
  5. Serve hot in small cups.
