
Blue berry muffins
- 2 cups of blue berries (take out the seed)
- 1/2 cup of low fat milk
- 2 tbsp of vanilla extract
- 2 eggs
- 1 stick of unsalted butter, softened
- 1 1/4 cup sugar or 3/4 of of any calorie-free sweetener of your choice.
- 1 tbsp of kosher salt
- 2 cups of whole wheat flour or oat flour
- 2 tbsp of baking soda
- zest of one lemon.
Ingredients
- Preheat oven to 375°F
- Cream the butter and sugar on medium-high mixer until light and fluffy.
- in a different bowl add the eggs, lemon zest, and vanilla. Mix until is fluffy.
- Add the flour, baking powder, and salt, alternating with the milk. Do not over mix
- Add the berries and gently dip them into the mixture.
- bake for 30-35 minutes
- Let cool for at least 10 minutes in the muffin tin before turning out onto a cooling rack. Serve with soft butter.
