Blue berry muffins

    Ingredients

  • 2 cups of blue berries (take out the seed)
  • 1/2 cup of low fat milk
  • 2 tbsp of vanilla extract
  • 2 eggs
  • 1 stick of unsalted butter, softened
  • 1 1/4 cup sugar or 3/4 of of any calorie-free sweetener of your choice.
  • 1 tbsp of kosher salt
  • 2 cups of whole wheat flour or oat flour
  • 2 tbsp of baking soda
  • zest of one lemon.

    Preparation

  1. Preheat oven to 375°F
  2. Cream the butter and sugar on medium-high mixer until light and fluffy.
  3. in a different bowl add the eggs, lemon zest, and vanilla. Mix until is fluffy.
  4. Add the flour, baking powder, and salt, alternating with the milk. Do not over mix
  5. Add the berries and gently dip them into the mixture.
  6. bake for 30-35 minutes
  7. Let cool for at least 10 minutes in the muffin tin before turning out onto a cooling rack. Serve with soft butter.
