Roasted vegetables sausage and potatoes
Ingredients
1 pound potatoes
½ teaspoon kosher salt
1 pound smoked sausage Turkey or Italian
1 red bell pepper diced
½ medium zucchini
½ red onion
For dressing
2 tablespoons olive oil
1 ½ teaspoons red wine vinegar
½ teaspoon dijon mustard
½ teaspoon dried basil
½ teaspoon salt or to taste
¼ teaspoon red pepper flakes
¼ teaspoon black pepper
1 clove garlic minced
Preparation
wash your potatoes and vegetables
Cut the sausage, the zucchini, and the onions in ½" slices.
Preheat oven to 425°F
mix all the dressing ingredients in a separate container.
use a tablespoon of dressing only on the potatoes and take them to the oven and leave them for about 15 or 20 minutes.
use the leftover dressing on the vegetables and mix them with the potatoes.
raise the temperature to 450°F and roast an additional 15 to 20.
You can leave the vegetables a little longer in the oven until they are well cooked if you like.
